- 200g sourdough starter discard
- 7g instant yeast (optional)
- 280g warm water
- 20g honey or sugar
- 30g olive oil
- 500g bread flour
- 20g sea salt
Instructions
- Combine sourdough discard, warm water, and honey in a large bowl and mix until dissolved.
- Add olive oil, flour, salt, and yeast (if using). Stir until a shaggy dough forms.
- Knead for 10–12 minutes by hand or 7–8 minutes with a mixer until dough is smooth and elastic.
- Place dough in a greased bowl, cover, and let rise at room temperature for 4–6 hours or refrigerate overnight.
- Divide dough into 4–5 equal balls and let them rest for 30 minutes, covered.
- Stretch dough gently by hand into pizza rounds; avoid using a rolling pin.
- Preheat oven to 500°F (260°C) with a pizza stone or baking steel inside.
- Add toppings to shaped dough, transfer to baking surface, and bake for 7–10 minutes until golden and crisp.
Notes
- Use oiled hands or a scraper to handle sticky dough instead of adding extra flour.
- Cold fermentation enhances flavor and makes dough easier to stretch.
- Semolina flour helps prevent sticking and adds texture.
- Pizza bases can be parbaked and frozen for later use.
