Description
Yemeni Chicken Mandi is a traditional rice dish infused with aromatic spices and tender chicken.
Ingredients

- 1 whole chicken (about 3–4 lbs)
- 2 cups basmati rice
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tomatoes, chopped
- 4 cups chicken broth
- 2 tablespoons ghee or vegetable oil
- 1 tablespoon Mandi spice mix
- Salt to taste
- Fresh coriander for garnish
Instructions
- Heat ghee or oil in a large pot over medium heat.
- Add chopped onions and sauté until golden brown.
- Add garlic and ginger, cooking for 1 minute.
- Add chicken and brown on all sides.
- Stir in chopped tomatoes and Mandi spice mix.
- Add chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 30-40 minutes until chicken is cooked.
- Remove chicken, set aside, and strain the broth.
- Add rice to the broth and cook according to package instructions.
- Meanwhile, roast chicken in the oven at 400°F for 10-15 minutes to crisp the skin.
- Fluff rice and serve with chicken on top, garnished with coriander.

- This dish pairs well with a salad or yogurt.
- You can adjust the spice level to your preference.
