Whipped Beef Tallow with Confit Garlic served with sourdough.
Ingredients

- 1 cup beef tallow
- 1 head of garlic
- 2 tablespoons olive oil
- Salt to taste
- Freshly cracked black pepper to taste
- Sourdough bread for serving
Instructions
- Preheat your oven to 300°F (150°C).
- Slice the top off the head of garlic to expose the cloves.
- Drizzle olive oil over the garlic and season with salt.
- Wrap the garlic in aluminum foil and bake for 45 minutes until soft.
- In a bowl, combine the beef tallow and roasted garlic cloves.
- Whip the mixture until smooth and creamy.
- Season with salt and black pepper to taste.
- Serve with slices of sourdough bread.
Notes
- Store leftover whipped tallow in the refrigerator.
- Use the confit garlic in other recipes as well.
- Adjust seasoning according to your preference.
