Whipped Beef Tallow with Confit Garlic served with sourdough.


Ingredients

  • 1 cup beef tallow
  • 1 head of garlic
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Sourdough bread for serving

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Slice the top off the head of garlic to expose the cloves.
  3. Drizzle olive oil over the garlic and season with salt.
  4. Wrap the garlic in aluminum foil and bake for 45 minutes until soft.
  5. In a bowl, combine the beef tallow and roasted garlic cloves.
  6. Whip the mixture until smooth and creamy.
  7. Season with salt and black pepper to taste.
  8. Serve with slices of sourdough bread.

Notes

  • Store leftover whipped tallow in the refrigerator.
  • Use the confit garlic in other recipes as well.
