Ingredients

- 1 cup vegetable broth
- 1 cup diced vegetables (carrots, celery, onion)
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Add diced vegetables and sauté until softened.
- In a large bowl, combine bread cubes, sautéed vegetables, thyme, sage, salt, and pepper.
- Pour vegetable broth over the mixture and stir to combine.
- Transfer stuffing to a greased baking dish.
- Bake for 25-30 minutes until golden brown.
- Garnish with fresh parsley before serving.

- Use any leftover bread for this recipe.
