Description

Ingredients

  • 1 can of pumpkin puree (15 oz)
  • 2 cans of black beans (15 oz each), drained and rinsed
  • 1 can of diced tomatoes (14.5 oz)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add chopped onion, bell pepper, and garlic. Sauté until soft.
  3. Stir in chili powder, cumin, salt, and pepper. Cook for another minute.
  4. Add pumpkin puree, black beans, diced tomatoes, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Taste and adjust seasoning if needed.
  7. Serve hot with your choice of toppings.
