Ingredients

  • 2 cups vegetable broth
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup spinach
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt to taste

Instructions

  1. Rinse the basmati rice under cold water.
  2. In a pot, combine rice and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until rice is cooked.
  4. In a large skillet, heat oil over medium heat.
  5. Add onion, garlic, and ginger. Sauté until fragrant.
  6. Add red bell pepper and zucchini. Cook for 5 minutes.
  7. Stir in curry powder, turmeric, and salt.
  8. Add coconut milk and spinach. Simmer for 10 minutes.
  9. Serve the curry over the rice.
