Description

This recipe makes loaded potatoes in a slow cooker. You mix potatoes with cheese bacon and sour cream for a side dish.


Ingredients

  • 5 pounds russet potatoes peeled and cubed
  • 1 pound bacon cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh chives chopped

Instructions

  1. Place potatoes in your slow cooker.
  2. Add water to cover potatoes.
  3. Cook on high for 4 hours.
  4. Drain water.
  5. Mash potatoes.
  6. Mix in butter milk sour cream salt and pepper.
  7. Stir in half of the cheese and bacon.
  8. Add the rest of the cheese and bacon on top.
  9. Heat on low for 30 minutes.
  10. Garnish with chives and serve.

Notes

  • Use russet potatoes for a light texture.
  • Cook bacon before you start.
  • Store leftovers in your fridge.
  • Replace sour cream with yogurt to change the flavor.
