  • 32 oz Beef or Vegetable Broth
  • 2 cans (15 oz each) Cannellini Beans, drained and rinsed
  • 1 large Yellow Onion, finely diced
  • 2 medium Carrots, finely diced
  • 2 stalks Celery, finely diced
  • 46 cloves Garlic, minced
  • 2 tbsp Tomato Paste
  • 1 piece Parmesan Rind
  • 1 dried Bay Leaf
  • 1 tsp Dried Oregano
  • 1/2 tsp Red Chili Flakes
  • 2 cups Fresh Kale, chopped
  • 2 tbsp Olive Oil
  • 1 tbsp Fresh Lemon Juice
  • Salt and Black Pepper to taste
  • Grated Parmesan and fresh Chives for garnish

Instructions

  1. In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium heat and sauté the onion, carrots, and celery until softened (about 5-7 minutes).
  2. Season the vegetables with salt, black pepper, dried oregano, and red chili flakes.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the ground beef to the pot, breaking it apart with a wooden spoon, and cook until thoroughly browned.
  5. Stir in the tomato paste and cook for 2 minutes to caramelize and deepen the flavor base.
  6. Pour in the marinara sauce and the broth, stirring to combine all ingredients.
  7. Add the drained white beans, the Parmesan rind, and the bay leaf.
  8. Bring the mixture to a boil, then reduce heat to low and simmer partially covered for 30 minutes.
  9. Stir in the uncooked ditalini pasta and continue to simmer for about 10 minutes or until the pasta is al dente.
  10. Remove the Parmesan rind and bay leaf, then stir in the fresh kale and lemon juice until the kale is wilted.
  11. Serve hot, garnished with extra grated Parmesan, fresh chives, and a drizzle of olive oil.
