Description

Discover the ultimate indulgence with The BEST Raspberry Truffles Recipe. These rich, velvety dark chocolate truffles are infused with fresh raspberry puree, offering a perfect balance of sweet and tart. Easy to make and incredibly impressive, they’re perfect for any occasion.

Ingredients

Scale
  • 12 ounces (about 340g) high-quality dark chocolate (60-70% cacao), finely chopped
  • 1/2 cup (120ml) heavy cream (double cream)
  • 2 tablespoons (30g) unsalted butter, cut into small pieces
  • 1 teaspoon vanilla extract
  • 1/2 cup (about 60g) fresh raspberries, pureed and strained (to remove seeds)
  • Pinch of salt
  • Unsweetened cocoa powder (for coating)
  • Powdered sugar (confectioners’ sugar, for coating)
  • Finely chopped nuts (pistachios, almonds, hazelnuts, for coating)
  • Shredded coconut (for coating)
  • Melted white chocolate or milk chocolate (for drizzling, optional)
  • Sprinkles or edible glitter (optional)

Instructions

  1. Prepare the Raspberry Puree: Wash fresh raspberries and cook in a small saucepan over medium-low heat for 5-7 minutes until softened. Press through a fine-mesh sieve to remove seeds, yielding about 1/4 cup of smooth puree.
  2. Make the Chocolate Ganache: Place finely chopped dark chocolate in a heatproof bowl. Heat heavy cream and butter in a small saucepan until simmering at the edges. Pour hot cream mixture over chocolate; let sit for 5 minutes. Whisk gently until smooth and glossy. Stir in vanilla extract, salt, and strained raspberry puree until fully incorporated.
  3. Chill and Form the Truffles: Cover the ganache with plastic wrap, pressing directly onto the surface. Refrigerate for at least 2-3 hours, or until firm enough to roll. Scoop portions with a small cookie scoop or teaspoon and roll into smooth balls between your palms. Place on a parchment-lined baking sheet.
  4. Coat Your Truffles: Prepare chosen coatings in separate shallow dishes. Roll each truffle in desired coating (cocoa powder, powdered sugar, nuts, coconut, etc.) until evenly covered. Drizzle with melted white chocolate if desired.
  5. Final Chill: Refrigerate coated truffles for another 30 minutes to an hour to allow coatings to set and truffles to firm up completely. Serve and enjoy!

Notes

  • For the best flavor, always use high-quality dark chocolate (60-70% cacao).
  • Ensure the plastic wrap touches the surface of the ganache during chilling to prevent a skin from forming.
  • If ganache becomes too soft while rolling, return it to the refrigerator for a few minutes.
  • Get creative with coatings! Chopped freeze-dried raspberries also make a beautiful and delicious option.
  • These truffles make wonderful homemade gifts when packaged in a pretty box.
