Ingredients

  • 3 large eggs beaten

  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon powdered sugar for dusting

Instructions

  1. Boil the carrots in a large pot of water until they are soft.
  2. Drain the water and place the cooked carrots in a large bowl.
  3. Mash the carrots with a hand mixer or food processor until smooth.
  4. Add the softened butter and mix well.
  5. Whisk in the sugar, baking powder, vanilla, and flour.
  6. Stir the beaten eggs into the mixture until combined.
  7. Pour the batter into a greased 2-quart baking dish.
  8. Bake at 350 degrees Fahrenheit for 45 to 60 minutes.
