- 1 cup mushrooms, sliced
- 1 cup baby spinach
- 12–15 dumplings (store-bought or homemade)
- 1 tablespoon lime juice
- 2 tablespoons green onions, chopped (optional garnish)
- 2 tablespoons fresh cilantro (optional garnish)
- 1 teaspoon chili oil (optional)
- Lime wedges for serving (optional)
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add minced garlic and grated ginger and sauté for about 1 minute until fragrant.
- Stir in Thai red curry paste and cook for another minute to release its flavor.
- Slowly pour in the vegetable or chicken broth while stirring to dissolve the curry paste.
- Add coconut milk and mix well to create a creamy curry broth.
- Season with soy sauce and brown sugar, then simmer for about 5 minutes.
- Add sliced mushrooms and cook for 3 minutes until tender.
- Stir in baby spinach and allow it to wilt.
- Add the dumplings and cook for 4–6 minutes until fully heated and tender.
- Stir in lime juice, garnish with green onions, cilantro, and chili oil if desired, then serve hot.
Notes
- Use high-quality Thai red curry paste for the best flavor.
- Do not overcook the dumplings to prevent them from breaking apart.
- Add vegetables like bok choy, bell peppers, or snap peas for extra texture and nutrition.
- Adjust the spice level by adding more chili oil or extra curry paste.
- If reheating leftovers, add a little broth to loosen the soup.
