  • 1 cup baby spinach
  • 1215 dumplings (store-bought or homemade)
  • 1 tablespoon lime juice
  • 2 tablespoons green onions, chopped (optional garnish)
  • 2 tablespoons fresh cilantro (optional garnish)
  • 1 teaspoon chili oil (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add minced garlic and grated ginger and sauté for about 1 minute until fragrant.
  3. Stir in Thai red curry paste and cook for another minute to release its flavor.
  4. Slowly pour in the vegetable or chicken broth while stirring to dissolve the curry paste.
  5. Add coconut milk and mix well to create a creamy curry broth.
  6. Season with soy sauce and brown sugar, then simmer for about 5 minutes.
  7. Add sliced mushrooms and cook for 3 minutes until tender.
  8. Stir in baby spinach and allow it to wilt.
  9. Add the dumplings and cook for 4–6 minutes until fully heated and tender.
  10. Stir in lime juice, garnish with green onions, cilantro, and chili oil if desired, then serve hot.
