Ingredients

  • 200g chicken breast, sliced
  • 1 cup chicken broth
  • 1/2 cup coconut milk
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp ginger, minced
  • 1 clove garlic, minced
  • 1/2 cup bell peppers, sliced
  • 1/4 cup green onions, chopped
  • 1 tbsp sesame oil

Instructions

  1. Cook ramen noodles according to package instructions.
  2. In a pan, heat sesame oil over medium heat.
  3. Add garlic and ginger, sauté for 1 minute.
  4. Add chicken and cook until browned.
  5. Stir in chicken broth, coconut milk, peanut butter, soy sauce, and lime juice.
  6. Simmer for 5-7 minutes until chicken is cooked through.
  7. Add bell peppers and cook for another 2 minutes.
  8. Serve the sauce over the cooked ramen and garnish with green onions.
