A flavorful Moroccan beef tagine that combines sweet and savory elements.
Ingredients

- 2 lbs beef stew meat
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1/2 cup dried apricots, chopped
- 1/2 cup almonds, toasted
- 1/4 cup honey
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and garlic; sauté until soft.
- Add beef and brown on all sides.
- Stir in spices and cook for 1 minute.
- Add tomatoes, broth, apricots, and honey.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours.
- Add almonds and cook for an additional 10 minutes.
- Season with salt and pepper.
- Garnish with cilantro before serving.
Notes
- Serve with couscous or rice.
- Adjust sweetness with more or less honey.
- Can be made a day ahead for better flavor.
