Ingredients

  • 2 lbs beef stew meat
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1/2 cup dried apricots, chopped
  • 1/2 cup almonds, toasted
  • 1/4 cup honey
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onions and garlic; sauté until soft.
  3. Add beef and brown on all sides.
  4. Stir in spices and cook for 1 minute.
  5. Add tomatoes, broth, apricots, and honey.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 1.5 to 2 hours.
  8. Add almonds and cook for an additional 10 minutes.
  9. Season with salt and pepper.
  10. Garnish with cilantro before serving.
