Instructions

  1. Heat the olive oil in a large pot over medium heat. When it shimmers, add the diced onion. Sauté 4‑5 minutes, stirring occasionally, until the onion becomes translucent.
  2. Add the minced garlic, sliced celery, and diced carrot. Cook another 3 minutes, letting the garlic turn fragrant but not browned.
  3. Stir in the red bell pepper, zucchini, and cherry tomatoes. Let the vegetables soften for about 2 minutes.
  4. Pour in the vegetable broth, then sprinkle the oregano, basil, and smoked paprika. Bring the mixture to a gentle boil, then reduce the heat to a simmer.
  5. Cover the pot and let the soup simmer for 12‑15 minutes, or until the carrots are fork‑tender. If you’re using shredded chicken, add it during the last 5 minutes to warm through.
