Description

A rich and moist dessert made with dates and drizzled with toffee sauce.


Ingredients

  • 200g pitted dates
  • 250ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Chop the dates and combine with boiling water and baking soda. Let it sit for 15 minutes.
  3. In a bowl, cream the butter and brown sugar until fluffy.
  4. Add the eggs one at a time, mixing well after each.
  5. Stir in the date mixture.
  6. Sift in the flour, baking powder, and fold gently.
  7. Pour the batter into a greased baking dish.
  8. Bake for 30-35 minutes until a skewer comes out clean.

Notes

  • Serve warm with vanilla ice cream.
  • Can be made ahead and reheated.
  • Store leftovers in an airtight container.
