  • ½ cup heavy cream
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare Ingredients: Finely chop onion, mince garlic, and roughly chop spinach.
  3. Sauté Onion: In a large, oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add chopped onion and cook until softened and translucent, about 5-7 minutes.

  8. Transfer & Bake (Initial): If not using an oven-safe skillet, transfer mixture to a prepared baking dish. Cover tightly with aluminum foil. Bake for 25 minutes.
  9. Stir & Finish Bake: Remove foil. Stir in heavy cream, butter, and 1 cup of Parmesan cheese until melted and creamy. Return uncovered to oven and bake for an additional 10-15 minutes, or until rice is tender and liquid is absorbed.
  10. Rest & Serve: Let rest for 5-10 minutes. Garnish with fresh parsley and extra Parmesan. Serve warm.
