- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 ½ cups uncooked Arborio rice
- 4 cups vegetable broth
- 10 ounces fresh spinach, roughly chopped
- 1 cup grated Parmesan cheese
- ½ cup heavy cream
- 2 tablespoons unsalted butter
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (optional, for garnish)
- Red pepper flakes (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Prepare Ingredients: Finely chop onion, mince garlic, and roughly chop spinach.
- Sauté Onion: In a large, oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add chopped onion and cook until softened and translucent, about 5-7 minutes.
- Add Garlic: Stir in minced garlic and cook for another minute until fragrant.
- Toast Rice: Add Arborio rice to the skillet. Stir constantly for 2-3 minutes until edges are translucent.
- Incorporate Spinach: Gradually add fresh spinach, stirring until it wilts down completely.
- Add Broth: Pour in vegetable broth, stir well, and bring to a gentle simmer. Season with salt and pepper.
- Transfer & Bake (Initial): If not using an oven-safe skillet, transfer mixture to a prepared baking dish. Cover tightly with aluminum foil. Bake for 25 minutes.
- Stir & Finish Bake: Remove foil. Stir in heavy cream, butter, and 1 cup of Parmesan cheese until melted and creamy. Return uncovered to oven and bake for an additional 10-15 minutes, or until rice is tender and liquid is absorbed.
- Rest & Serve: Let rest for 5-10 minutes. Garnish with fresh parsley and extra Parmesan. Serve warm.

- For extra richness, use chicken broth instead of vegetable broth.
- Adjust salt and pepper carefully, as Parmesan cheese adds significant saltiness.
- If the rice seems too dry during the final bake, add a splash more broth or milk.
