- 4 flour tortillas (or gluten-free tortillas)
- 2 cups fresh spinach, roughly chopped
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil or butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Optional: fresh parsley or dill for extra flavor
Instructions
- Heat olive oil in a skillet over medium heat.
- Add spinach and cook for 1–2 minutes until just wilted. Set aside.
- Place one tortilla on a flat surface. Spread mozzarella on half the tortilla.
- Add sautéed spinach and crumbled feta cheese over the mozzarella.
- Sprinkle with garlic powder, onion powder, and season with salt and pepper.
- Fold the tortilla over to cover the filling.
- Place it back in the skillet and cook for 2–3 minutes per side, pressing gently until golden brown and crispy.
- Remove from skillet, slice into wedges, and serve warm.
Notes
- Use dairy-free feta and mozzarella to make a vegan version.
- Thaw and drain frozen spinach thoroughly if using instead of fresh.
- Serve with tzatziki, hummus, or salsa for extra flavor.
- Cook quesadillas over medium heat for best crispiness without burning.
