Description

A flavorful Spanish dish made with rice, seafood, and broth.


Ingredients

  • 2 cups Bomba or Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned
  • 1 cup bell peppers, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp saffron threads
  • 1/2 cup peas
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, garlic, and bell peppers. Sauté until softened.
  3. Stir in the rice and cook for 2 minutes.
  4. Add broth, saffron, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add shrimp, mussels, and peas. Cook until seafood is done.
  7. Remove from heat and let it rest for 5 minutes before serving.

  • Use fresh seafood for best flavor.
  • Adjust spices to taste.
