Description
Soup Joumou is a traditional Haitian squash soup, enjoyed especially in January to celebrate New Year’s Day.
Ingredients
Scale
- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt to taste
- Pepper to taste
- Juice of 1 lime
Instructions
- In a pot, combine squash, carrots, celery, onion, and garlic.
- Add vegetable broth and bring to a boil.
- Reduce heat and simmer until vegetables are tender, about 20 minutes.
- Blend the soup until smooth.
- Return to the pot, add thyme, parsley, lime juice, salt, and pepper.
- Heat through and serve hot.
Notes
- Adjust seasoning to taste.
- Serve with crusty bread.
- This soup can be refrigerated for up to three days.
