Description

Soup Joumou is a traditional Haitian squash soup, enjoyed especially in January to celebrate New Year’s Day.


Ingredients

Scale
  • 1 medium butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • Salt to taste
  • Pepper to taste
  • Juice of 1 lime

Instructions

  1. In a pot, combine squash, carrots, celery, onion, and garlic.
  2. Add vegetable broth and bring to a boil.
  3. Reduce heat and simmer until vegetables are tender, about 20 minutes.
  4. Blend the soup until smooth.
  5. Return to the pot, add thyme, parsley, lime juice, salt, and pepper.
  6. Heat through and serve hot.

Notes

  • Adjust seasoning to taste.
  • Serve with crusty bread.
