Ingredients
Scale
- 1 ½ cups (360ml) warm water (105-115°F / 40-46°C)
- 2 ¼ teaspoons (1 packet) active dry yeast
- 1 teaspoon granulated sugar
- 4 ½ cups (540g) all-purpose flour, plus more for dusting
- 2 teaspoons coarse salt (for dough)
- ¼ cup (56g) unsalted butter, melted
- 10 cups (2.4 liters) water (for bath)
- ⅔ cup (135g) baking soda (for bath)
- 1 large egg, beaten (for egg wash)
- Coarse pretzel salt, for sprinkling
Instructions
- Activate the Yeast: In a large mixing bowl, combine the warm water, yeast, and sugar. Stir gently and let it sit for 5-10 minutes, or until the mixture becomes foamy.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour and coarse salt.
- Mix Dough: Add the flour mixture and melted butter to the yeast mixture. Using a stand mixer with a dough hook attachment or your hands, mix on low speed until a shaggy dough forms. Increase speed to medium and knead for 5-7 minutes (or 8-10 minutes by hand) until the dough is smooth, elastic, and pulls away from the sides of the bowl.
- First Rise: Lightly grease a clean large bowl with a little oil. Place the dough in the bowl, turning once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Punch Down Dough: Once risen, gently punch down the dough to release the air.
- Divide and Roll: Turn the dough out onto a lightly floured surface. Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 18-24 inches (45-60 cm) long and ½ inch (1.2 cm) thick.
- Cut Bites: Using a sharp knife or a bench scraper, cut each rope into 1-inch (2.5 cm) pieces. Arrange them on a parchment-lined baking sheet as you go.
- Preheat Oven: Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper and lightly spray with non-stick cooking spray.
- Prepare Bath: In a large pot, bring 10 cups of water to a rolling boil. Carefully add the baking soda. Reduce heat to a gentle simmer.
- Boil Pretzel Bites: Working in batches (about 15-20 bites at a time), carefully drop the pretzel bites into the simmering baking soda bath. Boil for 20-30 seconds per side. Do not overcrowd the pot.
- Drain and Transfer: Using a slotted spoon, carefully remove the pretzel bites from the bath, allowing excess water to drain. Transfer them to the prepared baking sheets, leaving a little space between each bite.
- Egg Wash and Salt: In a small bowl, whisk the egg for the egg wash. Brush the top of each pretzel bite with the beaten egg. Generously sprinkle with coarse pretzel salt.
- Bake: Bake for 12-15 minutes, or until the pretzel bites are deeply golden brown.
- Cool Slightly: Remove from the oven and let them cool on the baking sheets for a few minutes before transferring to a wire rack. Serve warm.

- The baking soda bath is crucial for the classic pretzel crust and flavor.
- Ensure your yeast is active by checking for foam after 5-10 minutes.
- For variations, consider cinnamon sugar, garlic parmesan, or everything bagel seasoning.
