Ingredients

  • 3 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 jalapeños, chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup lime juice
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup beef broth

Instructions

  1. Trim excess fat from the beef chuck roast.
  2. Season the roast with salt, pepper, cumin, and oregano.
  3. Place the onion, garlic, and jalapeños at the bottom of the slow cooker.
  4. Put the seasoned beef on top of the vegetables.
  5. Pour apple cider vinegar, lime juice, and beef broth over the meat.
  6. Cover and cook on low for 8 hours or until the meat is tender.
  7. Shred the beef with two forks and mix with the juices.
  8. Serve in tacos or burrito bowls.
