Ingredients

- 3 lbs beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 jalapeños, chopped
- 1/4 cup apple cider vinegar
- 1/4 cup lime juice
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp black pepper
- 1 tsp salt
- 1 cup beef broth
Instructions
- Trim excess fat from the beef chuck roast.
- Season the roast with salt, pepper, cumin, and oregano.
- Place the onion, garlic, and jalapeños at the bottom of the slow cooker.
- Put the seasoned beef on top of the vegetables.
- Pour apple cider vinegar, lime juice, and beef broth over the meat.
- Cover and cook on low for 8 hours or until the meat is tender.
- Shred the beef with two forks and mix with the juices.
- Serve in tacos or burrito bowls.

- Adjust spice level by adding more or fewer jalapeños.
- Use leftovers for meal prep throughout the week.
