Ingredients

- 4 large eggs
- 2 cups diced tomatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Feta cheese, crumbled
- 4 whole wheat wraps
- Fresh parsley, for garnish
Instructions
- Heat oil in a skillet over medium heat.
- Add onion and bell pepper. Sauté until soft.
- Add garlic, cumin, paprika, salt, and pepper. Cook for 1 minute.
- Add diced tomatoes. Simmer for 10 minutes.
- Make four wells in the sauce. Crack an egg into each well.
- Cover and cook until eggs are set.
- Sprinkle feta cheese on top.
- Serve in wraps, garnished with parsley.
