Description
Creamy rice pudding with a caramelized sugar top.
Ingredients

- 1 cup Arborio rice
- 4 cups whole milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 egg yolks
- 1/4 cup brown sugar for topping
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, milk, sugar, vanilla, and salt.
- Cook over medium heat, stirring occasionally, until the rice is tender and the mixture thickens.
- Remove from heat and let cool slightly.
- Whisk egg yolks in a separate bowl.
- Slowly add some of the warm rice mixture to the egg yolks, whisking constantly.
- Return the egg mixture to the pot and stir to combine.
- Pour the mixture into serving dishes and refrigerate until set.
- Before serving, sprinkle brown sugar on top and torch until caramelized.
Notes
- Use a kitchen torch for best results.
- Let the pudding cool completely before adding the sugar topping.
- Can be made a day in advance.
