- 1 cup dark chocolate, chopped
- 2 tablespoons butter
- 3 large eggs, separated
- 1/4 cup sugar
- 1 cup heavy cream
- 1 cup fresh raspberries
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the chocolate and butter together in a bowl over simmering water.
- In a separate bowl, whisk the egg yolks with sugar until pale.
- Add the melted chocolate mixture to the egg yolks and mix well.
- In another bowl, whip the heavy cream until soft peaks form.
- Fold the whipped cream into the chocolate mixture.
- In a clean bowl, whisk the egg whites until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture.
- Pour the mousse into a cake pan and chill for at least 4 hours.
- Before serving, top with fresh raspberries and dust with powdered sugar.

- Allow enough time for the mousse to set properly.
