  • 45 medium russet potatoes (about 2 pounds), peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • 1 cup whole milk or half-and-half
  • 1/2 cup sour cream (optional)
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese (optional topping)
  • 2 tablespoons chopped chives or green onions
  • 4 slices cooked beef, crumbled (optional)

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and cook for 5–7 minutes until soft and translucent.
  3. Stir in garlic, carrots, and celery and cook for about 3–4 minutes.
  4. Add diced potatoes, broth, bay leaf, and thyme. Bring to a boil.
  5. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  6. Remove the bay leaf and mash some of the potatoes with a potato masher to thicken the soup.
  7. Stir in milk and sour cream and heat gently without boiling.
  8. Season with salt and black pepper to taste.
  9. Serve hot topped with shredded cheddar, beef, and chives if desired.
