- 3 celery stalks, diced
- 4–5 medium russet potatoes (about 2 pounds), peeled and diced
- 4 cups chicken or vegetable broth
- 1 bay leaf
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 1 cup whole milk or half-and-half
- 1/2 cup sour cream (optional)
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese (optional topping)
- 2 tablespoons chopped chives or green onions
- 4 slices cooked beef, crumbled (optional)
Instructions
- Melt butter in a large pot over medium heat.
- Add chopped onion and cook for 5–7 minutes until soft and translucent.
- Stir in garlic, carrots, and celery and cook for about 3–4 minutes.
- Add diced potatoes, broth, bay leaf, and thyme. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Remove the bay leaf and mash some of the potatoes with a potato masher to thicken the soup.
- Stir in milk and sour cream and heat gently without boiling.
- Season with salt and black pepper to taste.
- Serve hot topped with shredded cheddar, beef, and chives if desired.
