Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1/2 pound sushi grade tuna, diced
- 1/2 cup edamame, shelled
- 1 avocado, sliced
- 1/4 cup green onions, sliced
- 2 tablespoons soy sauce
- 2 tablespoons spicy mayo
- 1 tablespoon sesame seeds
- Nori strips for garnish
Instructions
- Rinse sushi rice under cold water until the water runs clear.
- In a pot, combine rice and water. Bring to a boil, then reduce heat and simmer for 18 minutes.
- Remove rice from heat and let it sit covered for 10 minutes.
- In a bowl, combine diced tuna, soy sauce, and green onions.
- Once rice is ready, fluff it with a fork and divide it among bowls.
- Top rice with tuna mixture, edamame, and avocado slices.
- Drizzle with spicy mayo and sprinkle sesame seeds on top.
- Garnish with nori strips.
