Description

Discover how to make authentic, fluffy Dutch Poffertjes at home with this easy-to-follow recipe. These irresistible mini pancakes are perfect for breakfast, brunch, or a sweet treat!

Ingredients

Scale
  • 1 cup (240ml) lukewarm milk (about 105-115°F or 40-46°C)
  • 1 tablespoon active dry yeast
  • 1 tablespoon granulated sugar (plus a pinch for yeast)
  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg, lightly beaten
  • 2 tablespoons unsalted butter, melted and cooled (plus extra for cooking)
  • Powdered sugar, for dusting
  • Extra unsalted butter, for serving

Instructions

  1. In a medium bowl, combine lukewarm milk, 1 tablespoon granulated sugar, and active dry yeast. Stir and let sit for 5-10 minutes until foamy.
  2. In a separate large bowl, whisk together all-purpose flour and salt.
  3. Pour the foamy yeast mixture into the flour mixture. Add the lightly beaten egg and cooled melted butter. Whisk until smooth.
  4. Cover the bowl and let the batter rest in a warm place for 45-60 minutes, or until doubled in size.
  5. Heat a Poffertjes pan over medium-low heat. Brush each indentation generously with melted butter or oil.
  6. Carefully fill each indentation about two-thirds full with batter using a squeeze bottle or spoon.
  7. Cook for 1-2 minutes per side, until edges are set and golden brown. Flip and cook for another minute.
  8. Transfer cooked Poffertjes to a plate and keep warm. Repeat with remaining batter, re-greasing the pan as needed.
  9. Serve immediately on a platter, dusted generously with powdered sugar and topped with a knob of unsalted butter.

Notes

  • Ensure your milk is lukewarm (not hot) to activate the yeast without killing it.
  • Don’t overmix the batter; a few small lumps are okay.
  • The resting time for the batter is crucial for the fluffy texture.
  • Use a Poffertjes pan for the traditional shape, or a regular non-stick pan for mini pancakes.
  • Maintain a consistent medium-low heat for even cooking.
  • Poffertjes are best served warm, right off the pan.
