Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan, combine water and butter; bring to a boil.
  3. Add flour and salt, stirring until dough forms.
  4. Remove from heat and let cool slightly.
  5. Beat in eggs one at a time until smooth.
  6. Pipe dough onto a baking sheet in 4-inch strips.
  7. Bake for 25-30 minutes until golden brown.
  8. Let éclairs cool completely.
  9. Whip cream and fold in pistachio paste.
  10. Fill cooled éclairs with pistachio cream.
  11. Mix powdered sugar with milk to make glaze.
  12. Dip tops of éclairs in glaze and garnish with raspberries.
