Description

Omani Shuwa is a traditional dish made with slow-cooked lamb. It is often prepared for festive occasions and gatherings.


Ingredients

  • 1 whole lamb (about 1012 kg)
  • 6 cloves garlic, minced
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 2 tablespoons ground turmeric
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 cup olive oil
  • 1 lemon, juiced
  • 4 cups banana leaves or parchment paper

Instructions

  1. Clean the lamb thoroughly and pat it dry.
  2. Mix garlic, cumin, coriander, turmeric, salt, black pepper, olive oil, and lemon juice in a bowl.
  3. Rub the spice mixture all over the lamb, ensuring it is well coated.
  4. Wrap the lamb in banana leaves or parchment paper.
  5. Preheat the oven to 120°C (250°F).
  6. Place the wrapped lamb in a large baking dish.
  7. Cook the lamb in the oven for about 12-14 hours, or until tender.
  8. Remove from the oven and let it rest for 30 minutes before unwrapping.
  9. Serve the lamb with rice or flatbread.
