Description

A flavorful Middle Eastern dish featuring rice, dried fruit, and nuts.


Ingredients

  • 2 cups basmati rice
  • 1/4 cup raisins
  • 1/4 cup dried apricots, chopped
  • 1/4 cup almonds, sliced
  • 1/4 cup pistachios, chopped
  • 4 cups water
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Soak the rice in water for 30 minutes, then drain.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the onion and sauté until translucent.
  5. Add the rice and stir for 2 minutes.
  6. Add water, dried fruit, nuts, cinnamon, and salt.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and cook for 20 minutes or until rice is tender.
  9. Remove from heat and let sit for 5 minutes.
  10. Fluff with a fork before serving.
