Description
Maqluba is a traditional Middle Eastern dish made with rice, eggplant, and lamb. It is served upside down for a beautiful presentation.
Ingredients

- 2 cups rice
- 1 pound lamb, cubed
- 1 large eggplant, sliced
- 1 onion, chopped
- 4 cups water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon turmeric
Instructions
- Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat olive oil over medium heat. Add onions and lamb, cooking until browned.
- Add eggplant slices and cook until soft.
- Add water, salt, pepper, cumin, and turmeric. Bring to a boil.
- Add rice, reduce heat, and cover. Cook for 20 minutes or until rice is tender.
- Remove from heat and let it sit for 10 minutes.
- Invert the pot onto a serving platter to serve upside down.
Notes
- You can add other vegetables like carrots or bell peppers.
- Serve with yogurt on the side for added flavor.
- Make sure to soak the rice for the best texture.
