Description
Mansaf is a traditional Jordanian dish made with lamb and yogurt sauce.
Ingredients

- 2 pounds lamb, cut into pieces
- 4 cups water
- 1 large onion, quartered
- 2 cups plain yogurt
- 1 cup rice
- 1/4 cup pine nuts, toasted
- 1/4 cup almonds, toasted
- Salt to taste
- Black pepper to taste
- 2 tablespoons ghee or butter
Instructions
- In a large pot, combine lamb, water, onion, salt, and pepper. Bring to a boil and then simmer for 1.5 hours.
- Remove lamb and strain the broth. Reserve the broth for later use.
- In a bowl, mix yogurt with a bit of the reserved broth to temper it.
- In the same pot, add ghee or butter, then add rice and toast for a few minutes.
- Add 4 cups of the reserved broth to the rice and cook until rice is done.
- Return the lamb to the pot with the rice and mix gently.
- Serve the lamb over rice, topped with yogurt sauce and garnished with pine nuts and almonds.
Notes
- Adjust the seasoning to your taste.
- Serve with flatbread for a complete meal.
- This dish can be made ahead and reheated.
