Description

Lanzhou Hand-Pulled Beef Noodles is a traditional Chinese dish known for its flavorful beef broth and handmade noodles.


Ingredients

  • 500g beef shank
  • 200g wheat flour
  • 1 egg
  • 1 tsp salt
  • 2 liters water
  • 2 green onions
  • 1 tsp ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp chili oil

Instructions

  1. Prepare the dough by mixing flour, egg, and salt. Knead until smooth.
  2. Let the dough rest for 30 minutes.
  3. Cook beef shank in boiling water for 10 minutes, then remove and rinse.
  4. In a pot, add 2 liters of water, beef, ginger, and garlic. Simmer for 1.5 hours.
  5. Roll out and pull the dough into thin noodles.
  6. Cook the noodles in boiling water for 2-3 minutes.
  7. Serve noodles in a bowl with hot beef broth, sliced beef, green onions, and chili oil.

Notes

  • Adjust the spiciness by varying the amount of chili oil.
  • Serve with pickled vegetables for extra flavor.
  • You can substitute beef shank with brisket if preferred.
