Description
Indonesian Beef Rendang is a traditional dish featuring tender beef slowly cooked in coconut milk and spices.
Ingredients

- 2 lbs beef, cut into chunks
- 2 cups coconut milk
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 inches ginger, minced
- 2 tbsp chili paste
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tbsp tamarind paste
Instructions
- Heat a pot over medium heat.
- Add onion, garlic, ginger, and chili paste; sauté until fragrant.
- Add beef chunks; brown on all sides.
- Pour in coconut milk, add lemongrass, lime leaves, turmeric, salt, and tamarind.
- Bring to a boil, then reduce heat to low.
- Simmer for 2-3 hours until beef is tender.
- Stir occasionally and add water if necessary.
- Serve with rice.
Notes
- Use a tough cut of beef for best results.
- Adjust chili paste to your spice preference.
- Garnish with fresh cilantro if desired.
