Description

Indonesian Beef Rendang is a traditional dish featuring tender beef slowly cooked in coconut milk and spices.


Ingredients

  • 2 lbs beef, cut into chunks
  • 2 cups coconut milk
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, minced
  • 2 tbsp chili paste
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1 tbsp tamarind paste

Instructions

  1. Heat a pot over medium heat.
  2. Add onion, garlic, ginger, and chili paste; sauté until fragrant.
  3. Add beef chunks; brown on all sides.
  4. Pour in coconut milk, add lemongrass, lime leaves, turmeric, salt, and tamarind.
  5. Bring to a boil, then reduce heat to low.
  6. Simmer for 2-3 hours until beef is tender.
  7. Stir occasionally and add water if necessary.
  8. Serve with rice.

  • Use a tough cut of beef for best results.
  • Adjust chili paste to your spice preference.
