  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon chili oil or chili sauce
  • 1 teaspoon miso paste or brown sugar
  • 1 teaspoon sesame oil (optional)
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 teaspoon sesame seeds (optional garnish)

Instructions

  1. Bring a pot of water to a boil and cook the udon noodles according to the package instructions (about 2–3 minutes). Drain and set aside.
  2. Heat cooking oil in a large skillet or wok over medium-high heat.
  3. Add sliced onions, julienned carrots, minced garlic, and grated ginger. Stir fry for about 2–3 minutes until fragrant.
  4. Add the sliced mushrooms and cook for another 2 minutes until they soften.
  5. Add chopped napa cabbage and stir fry for 2–3 minutes until slightly tender but still crisp.
  6. Add the cooked udon noodles to the pan and gently toss them with the vegetables.
  7. Pour in soy sauce, chili oil, and miso paste (or brown sugar). Mix well so the noodles are evenly coated with the sauce.
  8. Continue stir frying for 2–3 minutes until everything is well combined and heated through.
