- 2 tablespoons cooking oil
- 1 small onion, sliced
- 1 carrot, julienned
- 1 cup mushrooms, sliced
- 2 cups napa cabbage, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon chili oil or chili sauce
- 1 teaspoon miso paste or brown sugar
- 1 teaspoon sesame oil (optional)
- 2 tablespoons green onions, chopped (for garnish)
- 1 teaspoon sesame seeds (optional garnish)
Instructions
- Bring a pot of water to a boil and cook the udon noodles according to the package instructions (about 2–3 minutes). Drain and set aside.
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add sliced onions, julienned carrots, minced garlic, and grated ginger. Stir fry for about 2–3 minutes until fragrant.
- Add the sliced mushrooms and cook for another 2 minutes until they soften.
- Add chopped napa cabbage and stir fry for 2–3 minutes until slightly tender but still crisp.
- Add the cooked udon noodles to the pan and gently toss them with the vegetables.
- Pour in soy sauce, chili oil, and miso paste (or brown sugar). Mix well so the noodles are evenly coated with the sauce.
- Continue stir frying for 2–3 minutes until everything is well combined and heated through.
- Drizzle sesame oil if using, garnish with green onions and sesame seeds, then serve hot.
