  • 1/2 cup sliced mushrooms

  • 1 tablespoon chili oil (optional)
  • 1 teaspoon brown sugar or honey
  • 2 tablespoons water or vegetable broth
  • 1 teaspoon sesame seeds for garnish (optional)

Instructions

  1. Prepare the udon noodles according to the package instructions. If frozen, briefly boil or rinse with warm water to loosen them, then set aside.
  2. In a small bowl, mix soy sauce, sesame oil, chili oil, brown sugar, and water to create the stir fry sauce.
  3. Heat vegetable oil in a large wok or skillet over medium-high heat.
  4. Add minced garlic and ginger, and stir fry for about 30 seconds until fragrant.
  5. Add bell peppers, cabbage, carrots, and mushrooms. Stir fry for 2–3 minutes until slightly tender but still crisp.
  6. Add the prepared udon noodles to the pan and gently toss them with the vegetables.
  7. Pour the prepared sauce over the noodles and mix well to coat evenly.
  8. Cook for another 1–2 minutes until the noodles absorb the sauce.
  9. Remove from heat and garnish with sliced green onions and sesame seeds.
  10. Serve immediately while hot.
