- 1/2 cup sliced carrots
- 1/2 cup sliced mushrooms
- 2 green onions, sliced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon chili oil (optional)
- 1 teaspoon brown sugar or honey
- 2 tablespoons water or vegetable broth
- 1 teaspoon sesame seeds for garnish (optional)
Instructions
- Prepare the udon noodles according to the package instructions. If frozen, briefly boil or rinse with warm water to loosen them, then set aside.
- In a small bowl, mix soy sauce, sesame oil, chili oil, brown sugar, and water to create the stir fry sauce.
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add minced garlic and ginger, and stir fry for about 30 seconds until fragrant.
- Add bell peppers, cabbage, carrots, and mushrooms. Stir fry for 2–3 minutes until slightly tender but still crisp.
- Add the prepared udon noodles to the pan and gently toss them with the vegetables.
- Pour the prepared sauce over the noodles and mix well to coat evenly.
- Cook for another 1–2 minutes until the noodles absorb the sauce.
- Remove from heat and garnish with sliced green onions and sesame seeds.
- Serve immediately while hot.
