A comforting and hearty chicken noodle soup made from scratch.
Ingredients
Scale
- 1 whole chicken (about 3–4 lbs)
- 8 cups water
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 8 oz egg noodles
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, place the chicken and cover with water.
- Add carrots, celery, onion, garlic, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 1 hour.
- Remove the chicken and let it cool. Discard the bay leaves.
- Once cooled, shred the chicken and return it to the pot.
- Add egg noodles and cook according to package instructions.
- Adjust seasoning if needed and serve hot, garnished with parsley.
Notes
- You can use leftover rotisserie chicken for a quicker option.
- Add more vegetables like peas or green beans if desired.
- This soup freezes well; store in an airtight container.
