- 1 cup panko breadcrumbs
- 1 cup all-purpose flour
- 2 eggs

- 2 carrots, sliced
- 2 potatoes, cubed

- 3 tablespoons curry powder
- 1 tablespoon soy sauce

Instructions
- Prepare the chicken by flattening it with a meat mallet.
- Season the flour with salt and pepper.
- Dip each chicken breast in flour, then egg, and finally panko breadcrumbs.
- Heat oil in a pan over medium heat and fry the chicken until golden brown.
- In another pot, sauté onions until soft.
- Add carrots and potatoes, cooking for a few minutes.
- Stir in curry powder, then add chicken broth and soy sauce.
- Simmer until vegetables are tender.
- Serve the chicken cutlets with the curry sauce poured over them.
