Ingredients

  • 1 pound ground beef
  • 2 large russet potatoes peeled and diced
  • 1 small yellow onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 8 small corn tortillas
  • 1/2 cup shredded cheese

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add diced potatoes to the skillet and cook until they turn golden and soft.
  3. Remove potatoes from the pan and set them aside.
  4. Place ground beef and onion in the same skillet.
  5. Cook until the meat browns and the onion softens.
  6. Drain grease from the pan.
  7. Stir in garlic chili powder cumin salt and pepper.
  8. Add the cooked potatoes back into the beef mixture.
  9. Stir everything together for two minutes.
  10. Warm your tortillas in a separate pan or microwave.
  11. Fill each tortilla with the beef and potato mixture.
  12. Top with cheese and serve.
