- 1 pound ground beef
- 2 large russet potatoes peeled and diced
- 1 small yellow onion chopped
- 2 cloves garlic minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 8 small corn tortillas
- 1/2 cup shredded cheese
Instructions
- Heat oil in a large skillet over medium heat.
- Add diced potatoes to the skillet and cook until they turn golden and soft.
- Remove potatoes from the pan and set them aside.
- Place ground beef and onion in the same skillet.
- Cook until the meat browns and the onion softens.
- Drain grease from the pan.
- Stir in garlic chili powder cumin salt and pepper.
- Add the cooked potatoes back into the beef mixture.
- Stir everything together for two minutes.
- Warm your tortillas in a separate pan or microwave.
- Fill each tortilla with the beef and potato mixture.
- Top with cheese and serve.
