- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 8 cups beef broth
- 1/2 cup dry white wine
- 1 tablespoon fresh thyme
- 1 bay leaf
- Baguette, sliced
- 2 cups Gruyère cheese, grated
Instructions
- Melt butter and olive oil in a pot over medium heat.
- Add sliced onions, salt, and sugar. Cook until caramelized.
- Pour in white wine and scrape the bottom of the pot.
- Add beef broth, thyme, and bay leaf. Simmer for 30 minutes.
- Preheat the oven to broil.
- Toast baguette slices until golden.
- Remove bay leaf from the soup.
- Serve soup in bowls, top with toasted baguette, and sprinkle cheese over it.
- Broil until cheese is melted and bubbly.

- Substitute cheese with a dairy-free option for a vegan version.
