Instructions

  1. Melt butter and olive oil in a pot over medium heat.
  2. Add sliced onions, salt, and sugar. Cook until caramelized.
  3. Pour in white wine and scrape the bottom of the pot.
  4. Add beef broth, thyme, and bay leaf. Simmer for 30 minutes.
  5. Preheat the oven to broil.
  6. Toast baguette slices until golden.
  7. Remove bay leaf from the soup.
  8. Serve soup in bowls, top with toasted baguette, and sprinkle cheese over it.
  9. Broil until cheese is melted and bubbly.
