Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray a muffin tin with cooking spray.
  3. In a bowl, whisk together the eggs and milk.
  4. Add the chopped spinach, cheese, salt, and pepper to the egg mixture.
  5. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until the eggs are set.
  7. Let cool for a few minutes before removing from the tin.
