- 2 (8-ounce) cans refrigerated crescent roll dough
- 1 pound breakfast sausage, mild or spicy
- 8 large eggs
- 1/2 cup milk (whole milk or half-and-half)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded cheddar cheese (or a cheddar-Monterey Jack blend), divided
- Optional: 1/4 cup chopped green onions or chives, for garnish
- Optional: 1/4 cup chopped bell peppers or spinach, sautéed lightly
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium-high heat, cook the breakfast sausage, breaking it up with a spoon as it browns. Drain off any excess grease and set aside.
- Unroll one can of crescent roll dough and arrange the triangles in the prepared baking dish, pressing the seams together to form a solid bottom crust. Repeat with the second can, overlapping and pressing to cover any gaps.
- In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined and slightly frothy.
- Sprinkle half of the cooked sausage evenly over the crescent roll crust. Scatter 1 cup of the shredded cheddar cheese over the sausage.
- Pour the whisked egg mixture evenly over the cheese and sausage.
- Top with the remaining cooked sausage and the remaining 1 cup of shredded cheddar cheese. Add any optional veggies if desired.
- Bake for 30-35 minutes, or until the casserole is set, golden brown on top, and the crescent rolls are puffed and cooked through.
- Remove from the oven and let it rest for 5-10 minutes before slicing and serving. Garnish with fresh green onions or chives if desired.

- For extra richness, use half-and-half instead of milk in the egg mixture.
