Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Mash the Bananas: In a large mixing bowl, thoroughly mash your ripe bananas with a fork until smooth.
  3. Combine Wet Ingredients: Add the nut butter, unsweetened applesauce, maple syrup (or sugar-free sweetener), and vanilla extract to the mashed bananas. Mix well until smoothly combined.
  4. Whisk Dry Ingredients: In a separate medium bowl, whisk together the rolled oats, flour, cinnamon, baking powder, and salt.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in any optional add-ins.
  6. Scoop & Shape: Drop rounded tablespoons of dough onto your prepared baking sheet, leaving about 2 inches between each cookie. Gently flatten each cookie slightly.
  7. Bake: Bake for 12-15 minutes, or until the edges are golden brown and the centers are set.
