- 8 ounces Gruyère cheese, freshly grated

Instructions
- Caramelize the Onions: In a large, heavy-bottomed pot or Dutch oven, melt the butter with the olive oil over medium-low heat. Add the thinly sliced onions, sugar (if using), 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir well to coat. Cook slowly for 45-60 minutes, stirring occasionally, until onions are a rich, deep golden-brown, sweet, and tender.
- Pour in beef broth. Add fresh thyme sprigs and bay leaf. Bring to a gentle simmer, then reduce heat to low, cover, and simmer for 20-30 minutes. Taste and adjust seasoning. Remove thyme and bay leaf.
- Prepare the Croutons: Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Drizzle with olive oil. Bake for 8-10 minutes, or until golden brown.
- Assemble and Broil: Preheat broiler. Ladle hot soup into oven-safe bowls. Place toasted baguette slices on top of each bowl. Generously sprinkle grated Gruyère cheese over the baguette.
- Carefully place bowls on a baking sheet and broil for 2-4 minutes, watching constantly, until cheese is melted, bubbly, and golden brown. Serve immediately with caution, as bowls will be very hot. Garnish with fresh chopped parsley if desired.
