- 1/2 cup (100g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 large egg, at room temperature
- 1 cup (240ml) whole milk, at room temperature
- 1/2 cup (113g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- 1/2 cup (100g) packed light brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons (28g) unsalted butter, melted
- 4 ounces (113g) cream cheese, softened
- 1 1/2 cups (180g) powdered sugar
- 2–3 tablespoons whole milk or heavy cream
- 1/2 teaspoon vanilla extract
Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C). Line a 12-cup standard muffin tin with paper liners or grease it well.
- Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Combine Wet Ingredients: In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
- Mix Wet into Dry: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula just until combined. Do not overmix.
- Make the Swirl Mixture: In a small bowl, combine the brown sugar, ground cinnamon, and melted butter. Stir until it forms a thick, paste-like consistency.
- Fill Muffin Cups: Divide about two-thirds of the muffin batter evenly among the prepared muffin cups.
- Add the Swirl: Drop small spoonfuls of the cinnamon swirl mixture over the batter in each cup.
- Top with Remaining Batter: Spoon the remaining muffin batter over the cinnamon swirl in each cup, covering it completely.
- Create the Swirl Effect: Using a toothpick or a small knife, gently swirl the cinnamon mixture into the batter a few times.
- Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Cool: Remove the muffins from the oven and let them cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
- Make the Glaze: While cooling, beat softened cream cheese until smooth. Gradually add powdered sugar, then vanilla extract, and finally milk/cream until desired drizzling consistency.
- Glaze and Serve: Once cooled, generously drizzle the cream cheese glaze over the tops. Serve immediately.
