  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted
  • 4 ounces (113g) cream cheese, softened
  • 1 1/2 cups (180g) powdered sugar
  • 23 tablespoons whole milk or heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and Prep: Preheat your oven to 400°F (200°C). Line a 12-cup standard muffin tin with paper liners or grease it well.
  2. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
  4. Mix Wet into Dry: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula just until combined. Do not overmix.
  5. Make the Swirl Mixture: In a small bowl, combine the brown sugar, ground cinnamon, and melted butter. Stir until it forms a thick, paste-like consistency.
  6. Fill Muffin Cups: Divide about two-thirds of the muffin batter evenly among the prepared muffin cups.
  7. Add the Swirl: Drop small spoonfuls of the cinnamon swirl mixture over the batter in each cup.
  8. Top with Remaining Batter: Spoon the remaining muffin batter over the cinnamon swirl in each cup, covering it completely.
  9. Create the Swirl Effect: Using a toothpick or a small knife, gently swirl the cinnamon mixture into the batter a few times.
