  • 2 cups apple cider
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 sprigs fresh thyme
  • 45 medium potatoes, sliced
  • 1/4 cup fresh sage leaves
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the roast with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat.
  4. Sear the roast on all sides until browned.
  5. Remove the roast and set aside.
  6. Add onions, carrots, celery, and garlic to the pot. Sauté until softened.
  7. Add apple cider and bring to a simmer.
  8. Return the roast to the pot and add thyme.
  9. Cover and transfer to the oven. Cook for 3-4 hours until tender.
  10. In a separate pan, melt butter and add potatoes and sage. Cook until crispy.
  11. Serve the pot roast with crispy sage potatoes.
