Description

Chorba Frik is a traditional Algerian soup made with green durum wheat and spices.


Ingredients

  • 1 cup frik (cracked green wheat)
  • 1 lb lamb or beef, cut into pieces
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 2 carrots, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 6 cups water or broth
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the meat and brown on all sides.
  3. Stir in tomatoes, carrots, bell pepper, paprika, cumin, salt, and pepper.
  4. Add water or broth and bring to a boil.
  5. Reduce heat and simmer for about 30 minutes.
  6. Add frik and cook for an additional 20 minutes until tender.
  7. Garnish with fresh parsley and serve hot.
