Ingredients
Scale
- 1 loaf (about 1 pound) stale challah, brioche, or French bread, cut into 1-inch cubes (about 8–10 cups)
- 4 large apples (such as Honeycrisp, Gala, or Fuji), peeled, cored, and diced into 1/2-inch pieces
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 6 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup packed light brown sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, melted, for greasing the dish
- For the Homemade Caramel Sauce:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream, warmed
- 4 tablespoons unsalted butter, cut into cubes
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Prepare the Bread and Apples: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with the melted butter. Spread the bread cubes evenly in the prepared baking dish. In a medium bowl, combine the diced apples, 1/2 cup granulated sugar, cinnamon, nutmeg, ginger, and cloves. Toss gently until the apples are well coated. Sprinkle the spiced apples over the bread cubes in the baking dish.
- Make the Custard: In a large bowl, whisk together the eggs until light and frothy. Gradually whisk in the whole milk, heavy cream, brown sugar, vanilla extract, and salt until well combined and the sugar has dissolved. Carefully pour the custard mixture evenly over the bread and apples. Gently press down on the bread cubes to ensure they are fully submerged. Let it sit for at least 20-30 minutes at room temperature, or cover and refrigerate for a few hours or overnight for best results.
- Bake the Bread Pudding: Cover the baking dish loosely with aluminum foil. Bake for 30 minutes. Remove the foil and continue baking for another 20-30 minutes, or until the top is golden brown, puffed, and a knife inserted into the center comes out mostly clean. Let the bread pudding cool slightly on a wire rack.
- Prepare the Homemade Caramel Sauce: In a heavy-bottomed saucepan, combine 1 cup granulated sugar and 1/4 cup water. Cook over medium heat without stirring until the sugar dissolves and turns a deep amber color (8-10 minutes). Immediately remove from heat. Carefully and slowly pour in the warmed heavy cream, whisking constantly. Add the cubed butter, vanilla extract, and salt. Whisk until smooth. Let the caramel sauce cool slightly before drizzling generously over your warm Caramel Apple Bread Pudding.
Notes
- Using slightly stale bread is key for optimal custard absorption.
- Allowing the bread to soak in the custard for several hours or overnight yields the most custardy and flavorful results.
- Be cautious when making caramel; it’s very hot.
- Store leftovers in an airtight container in the refrigerator for 3-4 days.
- Reheat in the microwave or oven; add fresh caramel for best taste.
