Description

Experience a delightful crunch with this Caesar Slaw with Crunchy Chicken recipe. Crispy, golden-fried chicken cutlets are served atop a fresh, zesty Caesar-dressed slaw for a meal that’s bursting with flavor and texture.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1.5 lbs total), cut into 1-inch thick cutlets or tenders
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Vegetable oil, for frying (about 3-4 cups)
  • 1/2 head green cabbage, thinly sliced or shredded
  • 1 head romaine lettuce, chopped
  • 1/2 cup shredded carrots (optional, for color and sweetness)
  • 1/4 cup finely chopped red onion (optional, for a little bite)
  • 1/2 cup homemade Caesar dressing (recipe below) or your favorite store-bought brand
  • 1/4 cup grated Parmesan cheese, plus extra for garnish
  • 1/4 cup croutons, for garnish (optional)
  • 1/2 cup mayonnaise (full-fat for best results)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon anchovy paste (optional, but highly recommended for authentic flavor)
  • 23 tablespoons cold water or milk, to thin (as needed)
  • Salt and black pepper to taste

Instructions

  1. Season the Chicken: Pat the chicken cutlets dry with paper towels. In a shallow dish, combine the flour, salt, black pepper, paprika, and garlic powder. Mix well.
  2. Set up Breading Stations: In a second shallow dish, beat the eggs. In a third shallow dish, combine the panko breadcrumbs and 1/2 cup Parmesan cheese.
  3. Bread the Chicken: Dredge each chicken piece first in the seasoned flour, shaking off any excess. Then dip it into the beaten eggs, ensuring it’s fully coated. Finally, press it firmly into the panko-Parmesan mixture, ensuring a thick, even coating. Set aside on a plate.
  4. Heat the Oil: In a large, heavy-bottomed skillet or Dutch oven, pour vegetable oil to a depth of about 1-inch. Heat over medium-high heat until it reaches 350°F (175°C). If you don’t have a thermometer, a small piece of panko should sizzle immediately when dropped in.
  5. Fry the Chicken: Carefully place a few chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown, crispy, and cooked through (internal temperature should reach 165°F / 74°C).
  6. Drain: Transfer the cooked chicken to a wire rack set over a baking sheet to drain any excess oil. Season lightly with a pinch of salt while hot. Repeat with remaining chicken.
  7. Combine Dressing Ingredients: In a medium bowl, whisk together the mayonnaise, fresh lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, and anchovy paste (if using).
  8. Add Cheese and Thin: Stir in the 1/4 cup grated Parmesan cheese. If the dressing is too thick for your liking, whisk in cold water or milk one tablespoon at a time until you reach your desired consistency.
  9. Season Dressing: Taste and adjust seasoning with salt and black pepper as needed. Set aside.
  10. Combine Vegetables: In a large mixing bowl, combine the thinly sliced cabbage, chopped romaine lettuce, shredded carrots (if using), and chopped red onion (if using).
  11. Dress the Slaw: Pour the homemade Caesar dressing over the vegetables. Toss gently but thoroughly until all the greens are evenly coated. Stir in the remaining 1/4 cup grated Parmesan cheese.
  12. Taste and Adjust Slaw: Give it a quick taste and adjust for salt, pepper, or lemon juice if desired.
  13. Plate: Divide the fresh Caesar slaw among serving plates.
  14. Top with Chicken: Arrange the warm, crunchy chicken pieces on top of or alongside the slaw.
  15. Garnish: Garnish with extra grated Parmesan cheese and croutons, if desired. Serve immediately.

Notes

  • For extra flavor and tenderness, you can marinate the chicken in buttermilk for at least 30 minutes before breading.
  • If you prefer a lighter option, you can bake or air fry the breaded chicken instead of frying. Bake at 400°F (200°C) for 20-25 minutes, flipping halfway, or air fry at 375°F (190°C) for 12-15 minutes.
  • Customize your slaw with other vegetables like bell peppers or cherry tomatoes for added color and nutrients.
  • Adjust the amount of garlic and anchovy paste in the dressing to your personal preference.
