Ingredients

  • 1 head of cabbage
  • 2 tablespoons olive oil
  • Salt to taste
  • 1 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 cloves garlic
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the cabbage into 1-inch thick steaks.
  3. Brush both sides of the cabbage steaks with olive oil and sprinkle with salt.
  4. Place the steaks on a baking sheet.
  5. Bake for 25-30 minutes until tender and browned.
  6. While the cabbage is baking, prepare the chimichurri sauce.
  7. In a blender, combine parsley, cilantro, garlic, red pepper flakes, red wine vinegar, and olive oil. Blend until smooth.
  8. Once the cabbage steaks are done, remove from oven and drizzle with chimichurri sauce.

  • Chimichurri can be made ahead of time and stored in the refrigerator.
